Susana, fez muito bem ter aqui colocado esta lista que tem origem no fórum kickas.org.
É um excelente ponto de partida para todos. Pelo menos foi o meu.

Mas gostava apenas de fazer umas pequenas observações sobre ele, que têm vindo também a ser colocadas por membros do kickas, ao longo dos anos.
Os dados que ali constam são reproduzidos de um livro publicado há alguns anos em Inglaterra por dois cientistas químicos, e constituem uma síntese de uma tabela de composição de alimentos que eles fizeram.
Existem alguns resultados que podem variar consoante a altura em que o alimento foi analisado. Por exemplo: uma maçã não tem o mesmo teor de amido se estiver ainda pouco madura, em relação a uma maçã já bem amadurecida. As qualidades das maçãs também são diferentes umas das outras. E o local de origem (produção), também não é o mesmo.
Daí que uma maçã de Alcobaça não possa ser considerada igual a uma maçã produzida em Inglaterra.
A couve-flor, por exemplo, que na lista do Kickas parece ser segura, na verdade até hoje ainda não encontrei em Portugal nenhuma que não tivesse amido. E um dos meus erros no início da dieta foi ter confiado que a podia comer, e só depois de uma crise dores que eu não conseguia perceber a razão, depois de andar uns bons dias a comer couve-flor, é que me lembrei de lhe fazer o teste do amido. Nunca mais lhe toquei. Mas isso não signifique que este mesmo legume, noutros pontos do mundo, com outras condições de produção não possa ser seguro.
Por isso, no início, o melhor mesmo é fazer o teste.
Eu agora, ao fim de dois anos e meio, já não o faço porque já aprendi o que devo e não devo comer. Só mesmo se for uma grande novidade é que uso o teste da tintura de iodo, ou se for comer fora e não tiver bem a certeza dos temperos que são usados (é que há muita farinha misturada nos molhos que por aí servem).

Esta lista foi também um ponto de partida para mim. Ainda estou há muito pouco tempo com este novo regime alimentar (seis meses) e, confesso, que a minha dieta se resume a meia dúzia de produtos alimentares. Rolling Eyes Ainda tenho muito medo de ter, novamente, uma crise igual àquelas que tinha, até há dois meses atrás...

A minha ideia sempre foi traduzir esta lita para português. Agora, claro, com as indicações que a Zélia partilhou connosco! Serão, por certo, de grande utilidade!
